How to Cook Salmon with Quinoa

The recent rediscovery of quinoa led the discovery of an even healthier category of healthier dishes around the world. Quinoa recipes which has been increasingly popular recently consist mostly of salads, together with its incorporation into many other dishes; they’re even made into breads now (quinoa flour).


For salmon lovers, you can always eat quinoa in place of rice if you want a healthier choice. But if you want to learn how to cook salmon with quinoa into an exciting dish, you should try this recipe out!

Quinoa salad with salmon

Ingredients
  • 225g (1 1/2 cups) quinoa
  • 500ml (2 cups) water
  • 1 cup fresh mint leaves
  • 70g (1/4 cup) low-fat yoghurt
  • 4 skin-on salmon fillets
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 bunch broccolini, coarsely chopped, blanched
  • 1 bunch asparagus, coarsely chopped, blanched
  • 1 fennel bulb, trimmed reserving fronds, halved, thinly sliced
  • 1/2 cup fresh dill sprigs
  • 1 tablespoon drained baby capers, chopped
  • Pinch of ground cumin
  • 1 lemon, rind finely grated, juiced
